Close your eyes as you eat this fresh and salty salad and picture yourself sitting on a Sun-drenched Greek island...perfect.
Serves 4 as side salad
Ingredients
- 1 red onion, cut into rings
- 16 pitted black olives
- 1/2 cucumber, cubed
- 8 cherry tomatoes, halved
- 7 oz / 200g tin chick peas
- 1 tbsp olive oil or to taste
- Juice of 1/2 lemon
- Salt and pepper
Method
- Place onion, olives, cucumber, cherry tomatoes and chick peas into a bowl.
- Drizzle olive oil and lemon into the bowl then add salt and pepper to taste.
- Toss, cover and chill for an hour.
