I was never a fan of rice pudding until I began cooking for myself. This coconut milk rice pudding has won
first place with me! You can add golden raisins, almond flakes, or grated coconut to this dish for added flavour. Either way, it’s delicious!

Cook Time 35 minutes

IngredientsVegan coconut rice pudding garnished with mango, lime and mint

  • 4 cups (960 ml) coconut milk
  • ¼ cup (45 g) coconut sugar
  • 1 teaspoon ground nutmeg
  • 1 vanilla bean, scraped
  • Pinch of salt
  • ½ cup (100 g) short-grain white rice

Method

  1. Place the coconut milk, sugar, nutmeg, vanilla, and salt in a small pot.
  2. Add the rice and stir, then cook on low heat until the rice is tender, 35 minutes. Stir frequently to prevent the rice from sticking to the bottom. Let cool before serving.
