By The Female Glaze
Rainbow cakes may be a classic, but this naked version is guaranteed to impress without ever hiding its true colours. Did you know that every stripe in the rainbow flag has a meaning? It originally included hot pink too which was removed due to a shortage of fabric, so I decided to pay homage to it with the writing on top. It’s the perfect cake to celebrate Pride month but it’s a bold statement any time of year!
Ingredients
Cake
- 400g self raising flour
- 250g white sugar
- 2 tsp baking powder
- 1/4 tsp sea salt
- 410g soy milk
- 150g sunflower oil
- 1 tsp vanilla extract
- 1/2 tsp each vegan food colouring
Frosting
- 450g vegan butter
- 1kg icing sugar
- 1/2 tsp vanilla extract
Method
1. Preheat the oven to 180°.
2. In a large bowl mix flour, sugar, baking powder and salt.
3. Add wet ingredients: soy milk, sunflower oil and vanilla. Whisk well until smooth.
4. Divide the batter into 6 cups and add 1/2 tsp of food colouring per cup.
5. Pour each cup of batter mixture into a 6-inch cake tin and bake in the oven for 15 minutes. Colours may alter slightly during baking.
6. Allow the cakes to cool down in their tins for 20 minutes before removing them.
For the frosting
7. Add vegan butter to a large mixing bowl and whisk with an electric hand until light and fluffy. Add vanilla extract and slowly add icing sugar. Keep mixing until well combined and soft.
8. Place a spoonful of buttercream on the bottom of the cake board and place the first sponge on top. Pipe your buttercream and keep alternating with the sponge and buttercream.
9. Decorate with extra frosting, sprinkles or fresh fruit. I personally love statement cakes, so this tends to be my signature touch.
10. Refrigerate for at least 1 hour before cutting.
