Orgullo is a vanilla cake adorned with an array of natural flowers, each one boasting a unique and vibrant hue embodying the colours of the rainbow. The floral decor represents the beauty, diversity, and vibrant essence of the queer community. The added touch of glitter reminds us of the magic that resides within us.

Ingredients

Batter

  • 500ml organic all-purpose flour
  • 5ml baking powder
  • 5ml baking soda
  • 2.5ml sea salt
  • 175ml organic cane sugar

Vegan Buttermilk

  • 250ml plant-based milk
  • 15ml apple cider vinegar
  • 125ml and 30ml canola oil
  • 15ml vanilla extract

Buttercream Frosting

  • 250ml vegan butter
  • 750ml organic powdered sugar
  • 15ml vanilla extract
  • 15ml plant-based milk of choice

Instructions:

For the cake

  1. Preheat the oven to 350 degrees fahrenheit and grease two 6-inch cake pans.
  2. Set aside 250ml of plant-based milk of your choice and add 15ml of apple cider vinegar. Allow the milk to curdle. This will create a vegan buttermilk.
  3. In a large bowl add all of the dry ingredients including flour, baking soda, baking powder, salt, and sugar. Whisk them all until they are well mixed.
  4. Add wet ingredients, oil, vanilla, and vegan buttermilk with the dry ingredients and whisk until they are well integrated.
  5. Divide the batter onto two 6-inch cake pans and place inside the oven at 350 degrees farenheit.
  6. Allow the cakes to bake for 25-30 minutes or until the inserted toothpick comes out clean.
  7. Once the cakes are out of the oven, allow them to cool thoroughly before icing them.

This recipe makes two 6-inch cakes! If you would like to make extra layers you can double the recipe.

Vanilla Buttercream Frosting

  1. For vegan buttercream, it is important to let the vegan butter sit out at room temperature until it's soft. Be sure to keep it from getting too soft, or the buttercream will have a runny consistency.
  2. Once the butter is ready, mix it in a large bowl until it is smooth.
  3. Sift one cup of powdered sugar into the bowl at a time and mix well.
  4. Add vanilla and plant-based milk as needed, and continue to mix until the buttercream is smooth and creamy.

If you'd like a thinner consistency for your vegan buttercream, you can add a small amount of plant-based milk. On the other hand, if you'd like a thicker consistency, you can add additional powdered sugar until the desired thickness is achieved.

After you ice the cake, adorn it with your favourite natural flowers or fruit, and add a sprinkle of plant-based glitter for a magical touch. I hope you enjoy!

About the Baker

Giselle Muñoz was born and raised in El Sereno, Los Angeles, CA. where she began baking from a young age. As a queer woman of colour, this form of art has evolved and transformed throughout the years, becoming a mode of self-expression and healing.
