Jamaican Ital Curry
A simple Jamaican-style ital curry stew that’s easy to make and creamy yet spicy. This recipe is taken from The Vegan Punks.
Ingredients
- 1 onion – chopped
- 4 garlic – diced
- 1 tbsp fresh ginger – diced
- 1 fresh chilli – diced
- 3 tbsp Jamaican curry powder
- 2 tsp thyme
- 2 bay leaves
- 400ml coconut milk (full fat)
- 200ml water
- 300g carrots – peeled & cut into 1cm pieces
- 300g sweet potato – peeled & cut into 2cm pieces
- 2 red peppers – cut into 1 inch pieces
- 1 tin kidney beans (400g) – drained & rinsed
- Brown rice
Instructions
- Pop a splash of oil into a large pan and bring up to medium heat.
- Fry the onions until soft, then add the garlic, ginger and chilli for 1 minute.
- Stir in the curry powder and continue to fry for 30 seconds.
- Pour in the coconut milk and 200ml water, then drop in the bay leaves and thyme. Bring to a simmer.
- Add the veg and continue to simmer for 10 minutes.
- Finally, stir through the kidney beans and simmer for another 10 minutes.
- Season with salt and pepper to taste, then serve with brown rice.
