Noodles are a symbol of longevity, which is why they are typically served at Chinese New Year. My aunt likes to cook vegetarian noodles on the first day of Chinese New Year to balance out all the heavy food that was eaten during the reunion dinner the night before. Here’s my raw vegan take on those noodles.

Serves 2

  • 2 courgettes (470 g), peeled and spiralised
  • 100 g yellow onion, sliced
  • 78 g beansprouts
  • 75 g red bell pepper, julienned
  • 70 g baby bok choy, sliced
  • 60 g napa cabbage (Chinese leaf), sliced
  • 66 g king oyster mushroom, sliced
  • 65 g carrot, julienned

For sauce

  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tbsp coconut nectar
  • 1 tsp nutritional yeast
  • 1 tsp tahini
  • 1 tsp Shaoxing wine
  • 1 clove garlic, grated
  • 1 tsp fresh ginger root, grated
  • 1/8 tsp ground white pepper
  • 1/8 tsp kala namak (Himalayan black salt)

For garnish

  • 20 g spring onions, sliced

Method

  1. Advanced prep: Place bell pepper, baby bok choy, napa cabbage (Chinese leaf) and carrot onto a tray in a single layer. Place in freezer and freeze for a minimum of 4 hours.
  2. Remove from freezer and allow to thaw for 4 hours at room temperature. Alternatively, you can warm them up in the dehydrator for 30 minutes at 45°C.
  3. Note: The freezing and thawing method will enable the vegetables to have a texture similar to cooked vegetables.
  4. Place onions in dehydrator to soften for 30 minutes at 45°C.

For sauce

  1. Whisk all ingredients in a bowl till combined.
  2. Place mushrooms into sauce to marinate while preparing the other vegetables.

To assemble

  1. Add vegetables, mushrooms and sauce into mixing bowl and toss to combine.
  2. Garnish with spring onions.
  3. If preferred, warm up dish in dehydrator at 45°C for 30 minutes prior to serving.

Tip: Remember to cut the spiralised courgette noodles so that they won’t be too long and will be easy to eat.
