Ratatouille originates from the French city of Nice - and the vegan version is even better!
Serves 6-8
Ingredients
- 4-5 tbsp vegetable oil
- 9 oz (250g) onions, chopped
- 1 cloves garlic, crushed
- 9 oz (250g) green peppers,
- 9 oz (250g) red peppers, cut into strips
- 5 oz (125g) aubergines, cubed
- 9 oz (250g) courgettes, chopped
- 9 oz (250g) fresh ripe tomatoes, or good quality tinned
- Oregano
- Salt
Method
- Stir fry the onions in half the quantity of oil for 5 minutes. Add the garlic, saute for a minute then add the peppers to the pan and gently sauté for a few minutes.
- Add the aubergine to the pan, add the rest of oil and saute for a further 5 minutes. Add the courgettes and cook for further 5 min, stirring occasionally.
- Coarsely chop the tomatoes and add them to the pan. Cook for another 5 min. Add oregano and salt to taste and serve.
