Close your eyes as you eat this fresh and salty salad and picture yourself sitting on a Sun-drenched Greek island...perfect.

Serves 4 as side salad

Ingredients

  • 1 red onion, cut into rings
  • 16 pitted black olives
  • 1/2 cucumber, cubed
  • 8 cherry tomatoes, halved
  • 7 oz / 200g tin chick peas
  • 1 tbsp olive oil or to taste
  • Juice of 1/2 lemon
  • Salt and pepper

Method

  1. Place onion, olives, cucumber, cherry tomatoes and chick peas into a bowl.
  2. Drizzle olive oil and lemon into the bowl then add salt and pepper to taste.
  3. Toss, cover and chill for an hour.
