» Wontons in Chili Oil

This is a recipe based on a very popular street food dish from Sichuan. These wontons have a thinner wrap and are in general smaller than normal dumplings. They are first cooked and then served with a spicy sauce made with chilli oil, chopped garlic and other seasonings. The wontons are very rich in flavour and quite easy to make.

Preparation time: 5 minutesWontons in chili oil in a bowl

Cooking time: 5 minutes

Serves 2 people

Ingredients:

  • 2 garlic cloves, finely chopped
  • 60 ml (2 fl oz/¼ cup) Chilli oil
  • 2 tablespoons sesame oil
  • 60 ml (2 fl oz/¼ cup) soy sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon toasted sesame seeds
  • 40 vegan wontons
  • 2 spring onions (scallions), sliced

Method:

  1. Mix together the garlic, chilli oil, sesame oil, soy sauce, dark soy sauce, black vinegar and toasted sesame. Divide the mixture into two bowls.
  2. Bring a saucepan of water to the boil and add the wontons. Stir occasionally to avoid sticking
  3. The wontons are cooked after they have floated to the surface of the water and cooked for about 30 seconds. Remove the wontons and divide them between the bowls then garnish with the spring onion.
