Save time and money with this tofu spin on a classic sandwich, perfect as a lunch time sandwich or a snack at any time of day.
Two servings
Ingredients:
- 200 g calcium-set firm tofu
- Vine tomatoes
- Lettuce
- Vegan mayonnaise
- Vegan tomato ketchup
- Four slices of wholemeal bread
Method:
- Cut the tofu into 5 mm slices.
- Fry the tofu in grapeseed oil with a pinch of salt on a medium heat until it is golden brown.
- Take four slices of wholemeal bread.
- Spread one slice of bread with tomato ketchup and another slice with mayonnaise.
- Slice the tomato and place half the slices on top of the mayonnaise.
- Place half the tofu on top of the tomato slices, then place some lettuce on top of the tofu.
- Season with salt and pepper (optional) and then cover with the other slice of bread.
- Repeat the process with the other two slices of bread.
