The lentils in this recipe provide loads of iron for growing bodies, while the vitamin C from the tomato helps with iron absorption.
Ingredients
- 25g dried red lentils
- 1 small potato, peeled and cubed
- 1/2 tsp tomato puree or tomato juice
- 1 small carrot, cubed
Method
- Place all ingredients in saucepan and just cover with water. Bring to the boil slowly and simmer until all liquid is absorbed and vegetables are softened.
- Cool a little and blend until smooth and creamy.
