150 ml fortified soya milk e.g. Plamil
5 dried apricots, simmered in a little water until soft
1 pear, peeled and chopped
1. Place oats and soya milk in saucepan. Simmer for 3-4 mins or until mixture thickens.
2. Cool a little and place in a blender with cooked apricots and pear chunks. Blend until smooth and creamy.
1 large potato, peeled and chopped
Florets removed from 1 broccoli stalk
1 courgette, sliced
2 or more tbsp soya milk
1. Steam or boil all vegetables for 10 mins or until cooked.
2. Cool a little and place in a blender with soya milk. Blend until smooth and creamy. Other vegetables can be used instead of those listed.
