2 pints/1.15L calcium-fortified soya milk
2 1/2 oz/70g plain white flour
salt and pepper to taste
Gradually add a quarter of the soya milk to the flour and mix to a
smooth paste. Place the remaining milk into a pan and bring to the boil.
Pour the boiling milk over the flour mixture, stirring all the time.
Return to the pan and simmer gently for ten minutes, stirring
occasionally. Season if required.
Mushroom: Add 1oz/30g (5oz/140g) of chopped mushrooms five minutes before the end of cooking.
*For a gluten- and wheat-free option use rice flour.
