Spiced apple cake
1lb/450g cooking apples, peeled and sliced
4oz/115g soft vegan margarine
4oz/115g raw cane sugar
4oz/115g sultanas
2oz/55g raisins
2 level tsp bicarbonate of soda
1 tbsp boiling water
8oz/225g plain wholemeal flour
1/2 tsp cinnamon
1 tsp dried ginger
1. Cook apples in a minimum of water. When they are soft, drain and mash to a puree.

Cream together margarine and sugar, then add the apple puree to make a
thick mixture. Stir in sultanas and raisins. Mix the bicarbonate of
soda with the water and add to apple mix.
3. Sift together flour and
spices and blend with first mixture. Pour it into a well-greased cake
tin, smooth the top and bake at 180C/350F/gas mark 4 for 45 minutes to
an hour.
