Shortbread
10oz/285g plain flour
5oz/140g cornflour
5oz/140g icing sugar
10oz/285g soft vegan margarine
sprinkle of fine caster sugar
1. Sieve plain flour, cornflour and icing sugar into a bowl. Rub in margarine until you have a breadcrumb consistency.
2. Knead to form a stiff dough. Press dough onto an oiled baking tray in a layer about 1/2 inch deep.
3. Prick all over and cut into triangles. Bake for about 35 minutes at 180C/350F/gas mark 4 until light golden brown.
4. Recut the sections and sprinkle with caster sugar.
