1 kilo (2lb 3oz) boiled potatoes
small bunch of parsley
6 spring onions
175g (6oz) vegan mayonnaise
salt and pepper
Chop the potatoes into 2 1⁄2-cm (1-inch) cubes.
Finely chop the parsley and spring onions and add to the potatoes.
Stir in the mayonnaise and season with salt and pepper. Serves 8.
