Chocolate fudge cake
450g (1lb) vegan margarine
1.15 litres (2 pts) soya milk
8 tablespoons golden syrup
225g (8oz) cocoa
900g (2lb) plain flour
900g (2lb) sugar
2 teaspoons bicarbonate of soda
Combine margarine, soya milk (apart from two tablespoons) and golden syrup in a pan and heat until ingredients melt together.
Combine cocoa, flour and sugar in a bowl. Mix retained two tablespoons of soya milk with the bicarbonate of soda.
Add the wet ingredients to the dry ingredients a little at a time, whisking thoroughly to ensure there are no lumps.
Place on a large baking tray lined with greaseproof paper and bake for 45 minutes at 180ºC/350ºF/gas 4. Serves 32.
